Jambalaya

Ingredients

1 ½ Cups White Rice, soaked, uncooked
1 lb. Andouille Sausage, sliced
1 lb. Chicken Breasts, cubed
1 Onion, diced
1 Celery Stalk, diced
1 Green Pepper, diced
2 Teaspoons Paprika
1 Teaspoon Salt
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Teaspoon Dried Oregano
1 Teaspoon Thyme
½ Teaspoon Ground Black Pepper
¼ Teaspoon Cayenne Pepper, optional
¼ Red Pepper Flakes, optional
1 Tablespoon Worcester
3-4 Cups Chicken Stock
Fresh parsley, chopped, to garnish

Instructions

  1. Into a large bowl, add rice and cover with room temperature water. Set aside while you prepare the jambalaya.
  2. In a large Dutch oven, over medium heat, add Olitalia Extra Virgin Olive Oil and sliced sausage. Brown for about 5-8 minutes. Remove and add cubed chicken to the pan and brown for 5-8 minutes. Add the sausage back into the pan, then add in the onions, celery, green pepper, and spices. Mix to combine; cook for about 8 minutes.
  3. Next, add in a whole can of Ciao Italian Whole Peeled Tomatoes and break up the tomatoes with a wooden spoon. Add in Worcestershire sauce and chicken stock.
  4. Strain the soaked rice and add it into the pot. Bring to a boil, then simmer and cook for about 30-35 minutes.
  5. Garnish with chopped parsley to serve and enjoy!
