Vodka Chicken Parm Hero

Ingredients

2x 4oz Chicken Cutlets
3 Slices Pancetta
Fresh Basil, to taste
Pecorino Romano, to taste

Instructions

  1. Prepare Caputo Semolina Bread, Ciao Traditional Vodka Sauce, and breaded chicken cutlets; set aside.
  2. Fill and heat a medium sauté pan with Olitalia Freinn High Oleic Sunflower Oil for frying chicken cutlets.
  3. Fry chicken cutlets on both sides until golden brown and internal temperature reaches 160°F (about 3–4 minutes per side).
  4. Crisp pancetta in the oven at 550°F for 4–6 minutes, or until curled and browned.
  5. Drain and pat dry the Deliziosa Burrata; set aside.
  6. Assemble the Vodka Parm Hero: cut open semolina bread, add fried chicken cutlets, ladle on hot Ciao Traditional Vodka Sauce, hand-tear Deliziosa Burrata over the top, and finish with crispy pancetta, fresh basil, and grated Pecorino Romano.
  7. Slice, serve, and enjoy!

Chef Domenico "Mimmo" Tolomeo

Domenico “Mimmo” Tolomeo is a first-generation Italian American who comes from a long line of master bread makers from Italy’s southern region. He joined the Orlando Foods team as our Corporate Chef in July 2022, and is currently the co-owner of Taglio Pizza in Mineola, NY. Mimmo trained under Award Winning Master Pizzaioli Roberto Caporuscio and Giorgia Caporuscio, under whose guidance he received his certification from the Associazione Pizzaiouli Napoletani, the governing body of pizza makers in Italy. His accomplishments include being part of the World Pizza Champions, being the recipient of the 2019 Caputo Rising Star Pizzaiolo at the Infamous Caputo Cup, and being the Capo Pizzaiolo at the world-renowned Keste Pizza e Vino.
