Lasagna Soup

This Italian Lasagna Soup brings traditional family flavors to your bowl. It's the perfect blend of ground meat, Ciao Tomatoes, Lasagna and cheese.

Ingredients

Soup
1 Onion, chopped
1 Celery Stalk, chopped
1 Large Carrot, chopped
1 Clove Garlic, minced
1 Lb Ground Beef
1 Lb Ground Pork
1/2 Teaspoon Fennel Seed
1 Teaspoon Salt
1 Teaspoon Basil, chopped, extra for garnish
1 Teaspoon Parsley, chopped
8 Cups Vegetable Broth
2 ½ Cups Fresh Spinach
½ Cup Ricotta, divided, to serve
Parmigiano Reggiano cheese, grated, to serve
Lasagna
8 Store Bought Lasagna Noodle Sheets, broken into fourths

Instructions

  1. In a large Dutch oven over medium heat combine Olitalia Extra Virgin Olive Oil with onion, celery, carrot, and garlic. Sauté until translucent, about 8 minutes.  
  2.  Next, add in beef, pork, fennel and salt. Sauté for another 10-15 minutes until the meat is cooked and all the way through.  
  3.  Finally, add in your Ciao Authentica Crushed Tomatoes, basil, parsley and broth. Bring to a boil then add in lasagna pieces and cook about 8 minutes until pasta is cooked through. If you are using Fresh Lasagna noodles, be sure to only cook them for 2-3 minutes.  
  4.  Once cooked, add in spinach and mix to combine.  
  5.  Serve with a dollop of ricotta, grated cheese, and basil.  
  6. Enjoy! :)
