Hearty Vegetable Soup

This hearty vegetable soup, enriched with farro and a blend of fresh flavors, beautifully showcases seasonal produce for a comforting and nutritious meal.

Ingredients

2 Cups Water
3 Cloves Garlic, minced
3 Carrots, peeled and chopped
2 Parsnips, peeled and chopped
2 Stalks Celery, chopped
1 Zucchini, chopped
3 Leeks, chopped
1 Tablespoon White Wine
4 Cups Vegetable Stock
¼ Teaspoon Fresh Thyme, chopped
2 Teaspoons Salt
1 Bunch Spinach,chopped
2 Cups Cooked Farro
Parmigiano Reggiano, for garnish

Instructions

  1. In a large Dutch oven over medium heat, add Olitalia Extra Virgin Olive Oil. Once heated, add the minced garlic, chopped carrots, parsnips, celery, zucchini, and leeks. Sauté for about 5 minutes until the vegetables soften.
  2. Pour in the Ciao Authentica Crushed Tomato, white wine, vegetable stock, and water. Stir well and bring the mixture to a boil.
  3. Once boiling, reduce the heat and let it simmer for about 45-50 minutes, allowing the flavors to meld together.
  4. In a separate pot, bring water to a boil and add in 2 cups of farro.
  5. Boil the farro for 10 minutes. Then strain and place off to the side.
  6. After simmering, add the chopped spinach and cook for another 5-10 minutes until the spinach is wilted. Then stir in the cooked farro.
  7. Ladle the soup into bowls. Garnish with Parmigiano Reggiano and a drizzle of Olitalia Extra Virgin Olive Oil before serving. Enjoy!
