- In a large Dutch oven over medium heat, add Olitalia Extra Virgin Olive Oil. Once heated, add the minced garlic, chopped carrots, parsnips, celery, zucchini, and leeks. Sauté for about 5 minutes until the vegetables soften.
- Pour in the Ciao Authentica Crushed Tomato, white wine, vegetable stock, and water. Stir well and bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for about 45-50 minutes, allowing the flavors to meld together.
- In a separate pot, bring water to a boil and add in 2 cups of farro.
- Boil the farro for 10 minutes. Then strain and place off to the side.
- After simmering, add the chopped spinach and cook for another 5-10 minutes until the spinach is wilted. Then stir in the cooked farro.
- Ladle the soup into bowls. Garnish with Parmigiano Reggiano and a drizzle of Olitalia Extra Virgin Olive Oil before serving. Enjoy!
