- Preheat the oven to 350 degrees F.
- Over medium heat in a 10-inch oven safe sauté pan, add Olitalia Extra Virgin Olive Oil, onion, garlic and yellow pepper. Sauté for about 5 minutes.
- Add Herbes de Provence, salt and 1 can of Ciao DOP San Marzano Tomatoes. Stir and cook tomato sauce for 25-30 minutes until reduced by about half. Allow it to cool.
- While the tomato sauce is cooking, slice eggplant, squash and tomatoes all around ¼ of an inch thick. We recommend using a mandolin for accuracy and to save time.
- Over the cooled sauce, arrange the sliced vegetables in a circular pattern standing upright in the dish.
- Cover and bake for 40-45 minutes. Uncover and cook for another 20-25 minutes.
- Garnish with more Olitalia Extra Virgin Olive Oil to serve and enjoy.
