Ratatouille

Master the art of Provence cooking with this classic ratatouille recipe, featuring premium DOP San Marzano tomatoes for refined and unbeatable flavor.

Ingredients

1 Small Red Onion, chopped
1 Clove Garlic, minced
1 Yellow Pepper, diced
1 Teaspoon Herbes de Provence
1 Teaspoon Salt
2 Eggplant, thinly sliced
2 Yellow Squash, thinly sliced
2 Green Squash, thinly sliced
2 Roma Tomatoes, thinly sliced

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Over medium heat in a 10-inch oven safe sauté pan, add Olitalia Extra Virgin Olive Oil, onion, garlic and yellow pepper. Sauté for about 5 minutes.
  3. Add Herbes de Provence, salt and 1 can of Ciao DOP San Marzano Tomatoes. Stir and cook tomato sauce for 25-30 minutes until reduced by about half. Allow it to cool.
  4. While the tomato sauce is cooking, slice eggplant, squash and tomatoes all around ¼ of an inch thick. We recommend using a mandolin for accuracy and to save time.
  5. Over the cooled sauce, arrange the sliced vegetables in a circular pattern standing upright in the dish.
  6. Cover and bake for 40-45 minutes. Uncover and cook for another 20-25 minutes.
  7. Garnish with more Olitalia Extra Virgin Olive Oil to serve and enjoy.
