Lentil Soup

This healthy, cozy, and warm lentil soup features the rich flavors of Ciao Authentica Tomatoes, making it the perfect dish to enjoy at home.

Ingredients

2 Celery Stalks, chopped fine
3 Carrots, chopped fine
1 Onion, chopped fine
1 Clove garlic, minced
1 lb. Green Lentils
1 Teaspoon Fresh Thyme, chopped
8-10 Cups of Any Stock or Water
2 Teaspoons Salt
1 Parmigiano Reggiano Rind
Parmigiano Reggiano, grated, to serve

Instructions

  1. In a large Dutch oven over medium heat, add Olitalia Extra Virgin Olive Oil, celery, carrots, onion, and garlic. Cook for about 8-10 minutes or until translucent.
  2. Add in the lentils and thyme and mix to combine.
  3. Next, add in the Ciao Authentica Crushed Tomatoes, the stock of your choice, salt, and the rind of Parmigiano Reggiano. Bring to a boil, then simmer for 35-45 minutes or until cooked.
  4. Serve with a generous amount of grated cheese and a drizzle of Olitalia Extra Virgin Olive Oil.
